Building your own board

A few markers for improvising your own pairings: a deep honey calls for a gently sweet almond (Cinnamon, Chocolate, Coconut) for a tea or coffee moment; a delicate honey prefers a light almond, so that its finesse is not crushed; a full-bodied honey goes with a savoury almond (Edam Cheese, Chilli, Wasabi, Salt and Smoke) for an alcohol-free spread that breaks with the classics. Always at room temperature, never straight from the fridge: honey and almond alike give their aromas fully at room temperature.
